Lemon Pepper Chicken
while you prepare ingredients heat oil in a pan on Medium (enough to submerge the chicken half way)
in a bowl mix together the following:
one egg white
one small slice butter (melted)
dash of milk
in a high lipped plate mix:
1 part flower
1/2 part lemon pepper
(I did equal parts and the LP was a bit strong)
when oil is fully heated (should start to smoke just slightly) put chicken in approx 2 mins (when batter starts to brown slightly) then turn for the same. (should no longer be pink in center when sliced open, but still extremely tender)
just boil until fully tender (doesn't take long) and add a smidge of butter to coat them when removed from water.
Anaheim Pepper Rice with Lima Beans
(you can opt out of the lima beans if you want, it wasn't bad, but I was eh either way)
prepare lima beans ahead of time according to directions on label. aka boil for two minutes and then top off with a lid, lower temp and let simmer for an hour.
When preparing rice add minced anaheim pepper to the water. (I used green anaheim pepper because I didn't want it that spicy). when done add a dash more of fresh minced anaheim pepper and season with seminole indian seasoning lightly.
Ta-Da!!+!! meal. Yum yum, and the best part is that you probably won't want dessert because the carrots are so darn sweet. Mmmmm I ate too much hee.
Yesterday I made myself some lattes too. pur. I might have to make more tonight. Oooo or a mochiato. I have a recipe for that and haven't tried it out yet. Hm, depends on whether I get this house finished or not. Gotta hurry hurry hurry then =D
So, for the first time, today I made myself a full out meal. Usually I just heat something simple up if it's just me or slap a sandwich together. I love to cook for other people, but I've never been all that interested in cooking for just me. I had the tops of the onion(s) I pulled from my garden the other day (was that just yesterday?) and wanted to do something with it before it started to wilt. Looked around the kitchen and there wasn't much to work with....which is usually when I get my most creative. I tossed a gajillion ideas around and ended up with: two small lemon pepper chicken breasts, a side of parisienne carrots, and anaheim pepper rice with lima beans.
